Cranberry & White Chocolate Cookies Recipe

I did a cookie recipe a couple of weeks ago and it seemed to go down really well so I thought I'd hit you with another one. It's basically the same recipe but slightly more festive - cranberry and white chocolate. Ooh la la.

Now, first off, I won't be winning any presentation brownie points for these bad boys. I've definitely not mastered the art of perfectly shaped cookies yet. So, if anyone has any tips on how to get them looking round and flat then please let me know!?

But, presentation aside, these cookies taste seriously YUM. I absolutely love the combination of cranberry and white chocolate - especially at this time of year. I'm obsessed with the Starbucks one but £1.59 for a single cookie is a little on the steep side really, ain't it? So I thought I'd make a whole batch of my own and, not gunna lie, they are just as good as the Starbs version!

You'll need: (for 12 cookies)
  • 225g self raising flour
  • 125g caster sugar
  • 100g light brown sugar
  • 100g white chocolate chunks/buttons
  • 100g dried cranberries
  • 1 lightly beaten egg
  • 125g soft butter
  • Tsp of vanilla essence and half a tsp of salt

How to make:

Pre-heat your oven to about 180 degrees celcius.

Cream the butter and both sugars together in a mixing bowl until it's lump free and, then, add the egg and vanilla and stir everything together.

Next,  sift in the flour and salt. Once mixed together, add in the cranberries and white chocolate buttons.

When you've got a nice firm mixture, spoon your mixture onto your baking sheet/s in 12 walnut sized dollops. Try and make sure each cookie has a decent amount of cranberry and white chocolate in them so they're all equally tasty!

Finally, put them in the oven for about 10 minutes. They'll be soft when you take them out still as that's what makes them nice and gooey on the inside!

Leave them to cool for a few minutes and then put on a wiring rack to cool even further. But make sure you try at least one whilst their warm!

I'm hoping to post some more recipes in the future so let me know if there's any in particular you'd like to see. British Lion eggs have some fab egg recipes on their website at the moment which I'm thinking of trying out - I especially love the look of these Christmas meringue snowmen - how cute!?

Let me know if you have a go at these cookies in the comments below :)
