- 225g self raising flour
- 125g caster sugar
- 100g light brown sugar
- 100g white chocolate chunks/buttons
- 100g dried cranberries
- 1 lightly beaten egg
- 125g soft butter
- Tsp of vanilla essence and half a tsp of salt
How to make:
Pre-heat your oven to about 180 degrees celcius.
Cream the butter and both sugars together in a mixing bowl until it's lump free and, then, add the egg and vanilla and stir everything together.
Next, sift in the flour and salt. Once mixed together, add in the cranberries and white chocolate buttons.
When you've got a nice firm mixture, spoon your mixture onto your baking sheet/s in 12 walnut sized dollops. Try and make sure each cookie has a decent amount of cranberry and white chocolate in them so they're all equally tasty!
Finally, put them in the oven for about 10 minutes. They'll be soft when you take them out still as that's what makes them nice and gooey on the inside!
Leave them to cool for a few minutes and then put on a wiring rack to cool even further. But make sure you try at least one whilst their warm!
